Aloo Bonda -Snack Item

                           Potato is favourite vegetable from childern to all ages... We can make different Snack Item with Potato As Main ingredient.. Here is one of my Snack Item.. 


Preparation Time : 20 min

Serves -  5



Ingredients:


Potatoes - 3 medium
Chopped Green chillies - 2
Besan - 1/2 cup
Rice flour - 1/4 cup
Water to knead
Oil for Deep fry
Zeera/cuminn Seeds - 1tbsp
Garam Masala - 1tbsp
Red chilli powder - 1/2 tbsp
Salt as required
Chopped Cashew -4 nuts (optional)
Chopped coriander - 2tbsp
chopped onions - 1
Ginger - Garlic paste - 1tbsp
turmeric powder - 1pinch
Baking Soda - 1/4 tbsp/ 3pinches




Method:



1. Wash,peel and boil potatoes with 1tbsp of salt.

2. Drain the potatoes and mash them.


3. In a kadai heat 4 tbsp of oil add chopped onions,curry leaves,cumin seeds, fry till onions changes to transparent color.Add Mashed Potato,Turmeric,Salt,Red chilli powder,Garam Masala powder,Ginger -Garlic paste,Cumin seeds,Chopped coriander,Baking Soda,Chopped cashew nuts cook for 2 min. and turn off the flame.


4. In a bowl add rice flour,Besan mix it with water to form batter.Heat oil for deep fry.


5. Shape the mixture in step3 into lemon-sized balls and gently place them in oil.


6. Fry till they get changed into golden brown color. Serve with Chatni/Tomato Ketchup.

Gulab Jamun - Sweet dish

       Gulab Jamun is Indian Traditional Sweet... made at the time of festivals.... Its absolutely an melt- in- mouth favourite dessert... 



Preparation time : 30 min
Serves - 4 people.


                  Makes about 25 Gulab jamuns depends on size.


Ingredients:

Khova/Khoya - 1 1/2 cup
Maida (all purpose flour) - 1 cup
Sugar - 3cups
Water - 1cup
Milk - 1/4 cup
Candamom powder - 1/4 tbsp
Baking Soda - 1/4 tbsp
Saffron Strands (optional ) - 5-7
Rose essence - 1tbsp/ 3 drops
Oil for deep fry.



How to Make It:


1. Combine and heat Water,Sugar in a thick bottomed vessel till sugar gets dissolved under low flame

2. Add Rose water,Candamom powder,Saffron strands keep syrup on low flame.


3. Heat oil in kadai. Or we can use Ghee and Oil in Equal mixture to get the rich traditional taste of Jamuns.


4. In a bowl mix Maida,Khova,Baking Soda and little amount of water/Milk to knead the dough.


5. Mix well and divide the dough into equal parts.


6. Greese the Palm with Ghee and make Jamuns of small lemon size.Make sure that no cracks are formed.


7. Gently place Jamuns in Oil for Deep fry.


8. Wait till they turn into Golden brown and transfer them to Sugar syrup.


9. Allow Jamuns to rest in syrup for about 1 hr so that Jamuns size gets doubled.








Tips:


1. While making the Jamuns make sure that No cracks are formed on the surface.

2. Maintain Medium flame while frying the Jamuns otherwise Jamuns will get burnt outside and becomes hard.


3. Too much baking soda can cause Jamuns to get disintegrate from oil.





Can Be served with Kulfi / Ice Cream of your desired Flavour...

Mysore Bonda/Bajji - Snack Item

Preparation Time : 30min
Serving - 4

Ingredients :

Maida/All Purpose Flour - 1 1/2 cup
Salt - 1 tbsp
Baking Soda - 1/4 tbsp
Yogurt/Curd - 1 cup
Green chillies - 1tbsp
Zeera - 1tbsp
Oil for Deep fry


Preparation:

1. In a bowl combine Maida ,Salt , yogurt,Zeera ,Green chillies,Baking Soda into thick paste without lumps.

2. Allow it to set for 15 min.


3. Heat oil in kadai till it gets piping hot.Make lemon sized rounded balls and gently place them in oil.


4. Fry them till they get turned into golden brown.


5. Serve with Coconut Chatni.









Tip:

             Mix Baking Soda to the Batter just a minute before to deep fry them. 




                

Gobi /Cauliflower manchuria

Preparation Time : 25 min
Serving - 5

Ingredients :


Gobi florets - 1 cup
Maida - 2tbsp
Corn Flour - 2 tbsp
Rice Flour - 1tbsp
1 tbsp Ginger- garlic paste
Chopped Green chillies - 1tbsp
hot Water - 1/2 cup
Red chilli powder - 1tbsp



For sauce:


Tomato sauce - 2tbsp
Green chilli sauce - 2tbsp
Soy sauce - 1tbsp
Ginger -garlic paste - 1/2 tbsp
Chopped Onion -1
Chopped Capsicum - 1
Chopped Spring onion -1
Minced Garlic - 4 cloves
Vinegar - 3 tbsp


Preparation Time :


1. Clean ,Wash the gobi florets .Soak them in hot water for about 10 min.This will remove germs and dirt in florets

2. In a bowl combine Maida,Corn flour,Green chilli,Ginger Garlic paste,Salt to taste,Red chilli powder mix water to make into thick paste.


3. Dip drained florets into the batter such that it is well coated.


4. Heat oil in kadai,Place coated floret into oil one by one fry them till they turns into golden brown.


5. In sauce pan add 3tbsp of oil add Chopped Onions fry for 1 min.Add Chopped garlic,Capsicum , Ginger - garlic paste ,Spring onion cook for 2min.


6. Add Sauces for seasoning toss them for 2min. Garnish with coriander leaves... 





Soy chunks/Meal maker Manchuria

  Soya Chunks is Nutrious Food and it has a lot of Benifits. You can Cook it in more different ways. Let me drop you one of the types..



Preparation Time : 30 min
Serving - 4


Ingredients:

Soy chunks/Meal Maker - 20 pieces
Ginger -Garlic paste - 1tbsp
Garam Masala - 1tbsp
Corn Flour - 3tbsp
Red chilli powder - 1 tsbp
Sauce (Tomato,Green chilli ) -2 tbsp each
Soy sauce - 1tbsp
Coriander leaves to garnish
Salt to taste
Oil for deep fry
Azinamoto/Tasting Salt - pinch
Vinegar - 2 drops
Chopped garlic - 4
Chopped onion- 1
Chopped Capsicum -1
Chopped Spring Onions - 2 tbsp


Preparation:

1. Soak Soy chunks in water for 2 min.Squeeze them and keep aside.

2. In a bowl add Corn flour,Red chilli powder,Ginger - Garlic paste,Garam Masala,Salt,pinch of turmeric,Azinamoto mix it with water to make a batter.


3. Dip squeezed soy chunks in batter.


4. Heat oil in a kadai and deep fry them


5. In a sauce pan add 3 tbsp of oil Chopped onion,Capsicum, Sauces,Chopped garlic fry them for a minute.


6. Add Soy chunks toss for 30 seconds.


7. Garnish with Spring onions and coriander leaves...


    


                               




Paneer Manchuria

Preparation Time :20 min
Serving - 4


Ingredients :

Paneer - 250gms
Flour (Maida,Corn) - 4tbsp each
Salt to taste
Red chilli powder - 1tbsp
Ginger - Garlci paste - 1tbsp
Chopped Garlic cloves - 4
Sauces (Tomato,Green chilli ) - 3tbsp each
Soy sauce - 1tbsp
Egg white -1 (optional)
Spring Onions - 3 tbsp
Chopped capsicm - 3tbsp
Corinader leaves for garnishing


Preparation :


1. Dice the Paneer into cubes.

2. In a bowl mix Flours,Ginger-garlic paste,garam masala,red chilli powder,salt, egg white,add water to it to make a batter.


3. Dip paneer pieces in batter and deep fry them in oil till they change into golden brown.


4. In a Pan add 2 tbsp of oil add Spring onions, fried paneer pieces,sauces,chopped garlic,chopped Capsicum toss them for 2min.


5. Finally Add Coriander leaves .Serve hot

Pudina/Mint Rice

Mint is one of the oldest and aromatic herb that is grown in around the world. I use it with Rice to enjoy the Minty flavour when fused with Rice .  

                  So... here is my Mint Rice 



Preparation Time : 30 min

Serves 4 people



Ingredients :





Washed Fresh Pudina/Mint leaves - 1/4 cup
Green chilli - 3
Peas - 3tbsp
Chopped Carrot - 2
Basmati Rice - 1 1/2 cup
Ginger - Garlic paste -1 tbsp
Chopped Onions - 2 (medium)
Wash and Peeled Ginger - 1"inch piece
Garlic Cloves - 5-6
1 black candamom
Cinnamon - 1" inch
Salt to taste
Shah Zeera/Caraway Seeds/Black Cumin Seeds- 1tbsp
Star Anise - 2 piececs
Bay Leaf
Grounded Cinnamon - 1tbsp
Oil - 4 tbsp
Water - 2 3/4 th cup




Preparation:



1. Wash and Soak Basmati rice in Water for 20min.


2. Grind Mint,Ginger,garlic,Green chillies into fine paste.


3. Heat oil /Ghee in cooker add cumin seeds,Cinnamon,cardamon,cloves,Star anise,Shajeera.Let it cook for 30sec.


4. Add Sliced Onions fry till they changes into transparent color add chopped vegetables,Green peas,Garam masala powder,Ginger - Garlic Paste,Cinnamon Powder.Saute for a minute.


5. Drain Rice from Water and Add to Cooker.along with Mint- Green chilli paste.With the help of Laddle Toss them  for 2min.


6. Add 2 3/4 cups of water to the Mixture.Close it and let it cook upto 4 whistles.


7. Turn Off the Flame Serve hot with Cashew nuts.






Tips: 


                                 Soak Green peas 1 hr before cooking.


       
               We can add Fried paneer to this dish.


          Its definitely a Different dish for those who got bored with Routine Rice...!!  





Jalebi- Indian Famous Sweet dish

Preparation time: 25 min
For 15 jalebis


Ingredients :


For jalebhi batter:

Plain flour /Maida -1 cup
1 tbsp Besan (Bengal Gram flour)
1 tbsp melted ghee
1tbsp Sugar
Yellow food color - 2drops


Sugar Syrup:


Sugar - 1/2 cup
Safron Strands/Kesar - 6-7
1/4tbsp Lemon Juice


Preparation:


For jalebi Batter:



1. Sieve the flour and Besan together.

2. Mix the Flour mixture,ghee,sugar,lemon,yellow food drops, with 2/3 cup of water to make it a thick batter.


3. Let it set for 15min.



For sugar Syrup:


1. Dissolve sugar with 1/2 cup of water and simmer for 5min till syrup is off 2 string consistency.

2. Add saffron and mix well. turn off the flame.


3. Heat oil in a kadai for deep fry.


4. Fill the jalebi batter into a cloth with a single hole nozzle .


5. Press round whirls into the oil .


6. Deep fry the jalebis till golden brown and transfer them into syrup.


7. Drain them and serve hot.



Tips:


                  Fry the jalebis immediately once the batter has rested for 10 minutes.

 
                              Spoil your hands with Syrup. ;) When you have a bite of  Jalebi you can Feel the Ooozing Syrup coming out from 
them........



American Chopsi - Deep Fried Noodles Snack Item

Preparation Time : 30 min
Serving - 4


Ingredients:


Boiled Maggie/Noodles - 1 1/2 cup


Sauce:

Chopped Vegetables(Cabbage,Carrot,Beans,Capsicum,Onions)- 5 tbsp each
Ginger -Garlic paste - 1tbsp
Salt to taste
Azinamoto/Tasting salt - 1 pinch
Black Pepper powder - 1tbsp
Sauces(Tomato,Chilli,Soya) - 1 1/2tbsp each for soya 1 tbsp
Vinegar - 3 drops
Red food color - 1pinch
Corn Flour - 2 tbsp
Maida - 1 tbsp
Red chilli powder - 1/2tbsp
Sugar - 1tbsp
Spring onions - 3tbsp
Salt to taste
Oil for deep fry


Preparation Time:


1. In sauce pan add 3 tbsp of oil add Chopped Vegetables cook them for about 3-4 min


2. Add 1tbsp of salt,Ginger - garlic paste,1tbsp of sugar,Azinamoto/Tasting Salt,Red chilli powder,Black Pepper,Sauces let it cook for 2 min


3. Add red food color mixed in 2 tbsp of water so that no lumps are formed add it to the sauce.


4. Add 1 tbsp of corn flour (mixed with water) to the sauce this acts as thickening agent.


5. Cook them till flavors comes out finally add spring onions to it toss them for a minute adjust the flavors and turn off the flame.



Noodles:


1. In boiled noodles add 1 tbsp of maida, 1 tbsp of corn four mix it for a second.


2. Deep fry oil in kadai add boiled noodles. Fry them till they get crisp.


3. In a bowl place Fried noodles and pour sauce over it.


                                                                                                        

       Serve Hot with Coriander Leaves.... add grated cheese from top if you want to add extra taste to this lovely dish.


                                   Let the Sauce Dance on Your Palate...



Bhoondi Mithai/Motichur Chakki - Sweet Dish

Preparation Time : 45 min



Ingredients:


250 gms of Besan/Sanagapindi

1 cup rice powder/biyyapindi
250 gms of grated jaggery
1 tbsp of candamom powder
oil for deep fry
Yellow food color - 1 pinch (optional)


Method:



1.Sieve the Besan and rice flour in a bowl mix it well with water to make Batter ( it should be same as Dosa Batter)

2. Deep fry the oil in kadai ,place Skimmer ( a mesh with rounded holes) over the oil and place batter into it.


3. Skimmer allow batter to drop into oil as balls.


4. Fry the bhoondi till they turn into golden color.


5. Remove fried bhoondi from oil place them on absorbent paper.


6. In thick bottomed vessel  add grated jaggery with 1 cup of water.We can add Yellow food color mixed with 2tbsps of water.Turn on the flame wait till jaggery melts.


7. Strain the syrup (this will help to remove  and heat it again till syrup gets thickend.


8. To check the consistency of syrup take a bowl of water add spoonfull of syrup to the water check whether syrup is able to mould into ball.


9. If it is then our syrup is ready turn off the flame add candamom powder to it.


10. Gently pour syrup by mixing over fried bhoondis.


11. To get the shape of  thick rectangle flaten it with a Chapathi roller

12. Let it set for atleast 1 hr to become hard.


13. After it is set break them into pieces.

Bhoondi Laddu



By shaping the mixture in round shapes/Laddus Bhoondi Laddu is ready.


With cashew nuts/Pistachios

We can add chopped Pistachios/Cashew nuts after syrup is placed on bhoondis.







Crispy Potato Chips

Preparation time - 20min


Ingredients :


Potatoes - 1kg
Oil required for deep fry
Salt to taste
Red Chilli Powder/Flakes (optional)


Preparation:


1. Wash and peel the potatoes.

2. Slice the potatoes using potato slicer.

3. In a vessel containing water to soak the potato slices.

4. Soak them for about half an hour.This removes excess starch from potatoes and make them crisp when fried.

5. Drain the water dry the potato slices on cloth till moist in them gets wiped away.

6. Heat oil in kadai deep fry them.

7. Scatter red chilli powder/Flakes and pinch of salt toggle them .



               
                             Delicious fresh home made potato chips are ready to bite.


            Now For You I Think There is no need to rip off the packet brought from stores.

Birds Nest- Noodles Snack Item

              Birds Nest is a simple recipe can be made with Maggi... Sounds Yummy..!!!

               

                                           Lets have a look how to prepare this for snack lovers in your home.




Preparation Time : 20 min
Serving - 5



Ingredients:


Maggie - 3 pieces
  or
Boiled noodles - 1 cup
Ginger-Garlic Paste - 1tbsp
Garam Masala Powder - 1tnsp
Red chilli powder - 1/2tbsp
Green chillies -1 tbsp
Chopped Cashew nuts - 6 
Potatoes - 3 medium
Corn flour - 3 tbsp
Oil for deep fry
Sugar - 1/2 tbsp (optional)



My kind of Making:


1. Boil 3 pieces of Maggie without Maggie Powder with a pinch of salt.

2. Wash ,clean and pressure cook the potatoes with a pinch of salt.


3. After Pressure is off peel the potatoes mash them in a bowl add Ginger-Garlic paste,Garam Masala,Green Chilli,Red chilli powder,Salt to taste,Cashew nuts,Sugar(optional) and mix them with water  to make it a dough.


4. The dough should be thick enough as chapathi dough .Divide them into 8- 9 rounded balls.


5. Sprinkle the corn flour powder on the floor.Roll the Potato balls over the floor so that ball is covered with flour.


6. Now again cover the ball with boiled noodles so that no space can be left.


7. Heat oil in a kadai for deep fry gently place the balls into oil and deep fry them till they get turns into golden brown.


8. Serve hot with Tomato Kethup.


     
                                    I Bet all kinds of ages will love the Dish.....


Tips:


                 Balls should be rolled on corn flour so that it helps in sticking the noodles to the ball..This will not allow the noodles to get seperated from ball when fried in the oil.



                                           -----------    Its Chewy inside crunchy outside.

                 Sounds Different then just give it a try this evening...!!

How to prepare Paneer

Paneer is a type of cheese and can be done with easy and simple method. It can be prepared in home as we can make several lovely and delicious dishes with paneer.

                                           

                                                    My Method of making Paneer



Ingredients:

Milk - 1 litre
Lemon juice - 1/4 cup or 5 tbsp


Preparation:


1. In a thick bottomed Vessel pour milk and bring them to boil under medium flame make sure not to boil milk.

2. Now Add Lemon jiuce to milk.Milk starts crackling and forms into lumps.


3. Once the milk fast seperates from the whey drain the whey /fat using muslin cloth under a vessel.


4. Wrap the curds/Fat in muslin cloth ,rinse under cold water and squeeze well so that lemon flavor eliminates.


5. Shape the Muslin Cloth in desired shape and wrap it up such that air should not enter into it and place a huge pan over it. This makes left over water drains out from the fat/whey.


6. Do not disturb for about 4- 5 hrs/overnight.


7. Paneer is ready and we can cut into desired shape .

Chum Chum - Sweet dish

Preparation time : 30 min



Ingredients :


Fresh Paneer  - 250gms

Salt - pinch
Elachi powder - 1tbsp
Sugar - 3 cups
Water - 5 cups



Method:


1. Knead fresh Paneer with 1 tbsp of flour for about 4- 5 min till lumps are not formed. If the paneer is too dry add 1 tbsp of water to it.

2. Divide it into 10 equal parts and roll them into oval shaped balls.


3. Now In a Pressure cooker Add 5 cups of water pinch of salt,Elachi powder and sugar bring them to boil till sugar dissolves into water.


4. Add chum-chum/Paneer balls to the syrup Pressure cook them for 15- 20 min.


5. After removing pressure flip the chum - chum to other side and pressure cook for another 5 min.


6. Remove the pressure make sure that chum-chums will Increase double in size .


7. Syrup will be absorbed by chum-chums remove them from syrup.


8. Serve chill....!!!



Tips:

Make sure that no cracks are formed while making balls.

With Pistachios:
             
                We can add Chopped pistachios as Toppings over chum-chums.

With Coconut Power:


             We can roll the Chum- Chum over Coconut powder.







Malai Kofta Curry

Preparation time :45 min
Serving - 5



Ingredients:


For Koftas:


Bread slices - 3

Crumbled Paneer - 1/2 cup
Potatoes( boiled and smashed)- 3 Medium
Carrot ( boiled and smashed) - 2 
Raisins /Kismish - 7-8
Chopped Cashew - 8
Finely chopped Green chillies - 1 tbsp
Coriander/Dhania Powder - 1tbsp
Red chilli powder - 1tbsp
Salt to taste
Sugar - 1tbsp
Cumin powder -1 tbsp
Candamon Powder - 1tbsp
Garam Masala Powder - 1tbsp
Lemon juice - 1 1/2 tbsp
Black Pepper powder to taste.
Bread Crumbs - 4 tbsp



For Gravy:


3tbsp of Butter /Ghee
Oil for Deep fry
Tomatoes - 5 medium
Onions - 3 medium
Ginger -garlic paste - 1tbsp
Coriander leaves to garnish
Cornflour - 1tbsp
Green chilli - 1 tbsp
Sugar - 1tbsp
Red chilli powder - 1/2 tbsp
Dhania powder - 1/2 tbsp
Garam Masala - 1/2 tbsp
Cloves - 4
Cinnamon Stick - 1" inch
Zeera /Cumin seeds - 1tbsp
Cashew paste - 3 tbsp
Poppy seeds - 2tbsp



Method:


Koftas:


1. In a bowl crush the Bread slices,Smashed potatoes,carrot and mix all the other ingredients well and make it a dough.

2. With the oiled hands divide the dough into 12- 14 equal parts.


3. Heat oil in a pan as required for deep fry.


4. Spread bread crumbs on the floor.Dip the koftas in the bread crumbs and gently place the koftas into oil .


5. Fry the koftas till they turn into Golden brown color.


6. Place the koftas on absorbent paper.



Gravy:


1. Heat oil in kadai add poppy seeds,Cumin seeds,Cloves,Cinnamon stick let them pop.

2. Meanwhile boil tomatoes for about 5-6 min in a thick bottomed vessel with a pinch of salt.Let them boil.After 5 min drain tomatoes from water and peel them.Grind the tomatoes to make into puree.


3. Now add chopped onions saute them till they turn into transparent color add Tomato puree,Salt,Sugar,Dhania,Red chilli,Garam masala,Ginger - garlic paste,Green chilli.


4. Now add Cashew paste Adjust salt and Red chilli powder as per  

 requirement .Add water if necessary.

5. Add 1tbsp of cornflour to water (so that no lumps are formed) to the gravy mix them well let it cook for 4-5 min till the gravy gets thickend and aroma pops up.


6. Turn off the flame and Garnish with Coriander leaves.


7. This delicious dish can be served by adding koftas to the gravy.




Tips:

       
           Sprinkle the Grated cheese on the top of the dish for extra toppings.

             

                              Add koftas just before serving otherwise koftas will turn soggy.




                                  Can be served with Naan/Roti/Pulao




Baby Corn Manchuria

Preparation Time : 20 min
Servings : 4



Ingredients:



Sweet corn seeds - 1 and half cups
Corn Flour - 1/2 cup
Ginger- Garlic paste - 1 tbsp
Salt to taste
Red chilli powder - 1tbsp
Oil as required for deep fry
Chopped onions -2 medium
Soy sauce - 1 tbsp
Tomato Kecthup - 6 tbsp
Slices Garlic pieces - 1 tbsp
Chopped Green chillies - 1 tbsp
Vinegar - 1tbsp
Coriander Leaves for garnish
Cashew nuts - 5



Preparation :



1. Pressure cook Sweet Corn with a pinch of salt.

2. In a bowl mix Sweet corn,Ginger-garlic paste,Salt,Corn flour ,Green chillies,Red chilli powder make it as dough.


3. Heat oil in kadai for deep fry and divide the dough into lemon sized balls.


4. Fry the manchurian balls till they turn into golden brown.



For Seasoning:


5. In a pan add 2 tbsp of oil add Chopped onions,Minced Garlic 6 tbsp of Tomato Ketchup,1 tbsp of soy sauce mix well add Vinegar,Manchurian Balls to it .

6. Toss them up for a minute and garnish with Coriander leaves,Cashew nuts.




Tips:


                       At the time of Seasoning maintain Low flame.




Paneer Fried Rice

Preparation Time : 30 min
Serving - 4



Ingredients:


Paneer cubes- 250gms
Cashews - 10 nuts
Ginger-Garlic Paste - 1 tbsp
Dhania Powder - 1 tbsp
Boiled Basmati Rice - 2 cups
Onions - 2 large
Green chilli  -3
Carrot - 2 medium
Potato - 2 medium
Salt to taste
Oil - 2 tbsp
Butter - 50gm
Cinnamon Stick - 1" inch
Cloves - 6
Bay  leaf -1
Garam Masala powder - 2 tbsp
Red chilli powder -1 tbsp
Saunf/Zeera/Cumin seeds - 1tbsp
Star Anise/Anaasapuvvu -2
Mace/Japatri - 2
Wailong /Marati mogga -2 pieces
Shaajeera - 1tbsp
Lemon Jiuce - 1tbsp
Corainder Leaves to garnish

1. Heat 1tbsp of oil and 10 gms of butter in non -stick pan Add Cumin seeds,Star anise,Mace,Marati mogga,Shajeera,Cinnamon stick,Bay leaf.Let them pop.


2. Add Horizantally Chooped onions,Green chilli,Ginger -Garlic paste saute them till onions turn into transparent color.Now chopped carrots,Potatoes,1tbsp of salt. Let them cook for 5-7 min


3. Add Dhania,Garam Masala,Red chili powders to the mixture.Adjust salt to taste.


4. Add the vegetable mixture to the boiled rice adjust Red chilli powder,Salt to your taste


5. In separate Pan add 3 tbsp of butter with Paneer cubes for 2 min now add cashew nuts and toss them up for a minute till they get golden brown color.


6. Add paneer pieces to Basmati rice 1tbsp of lemon juice.Mix well 


7. Garnish with coriander Leaves.





               




Tips:

               Add Fried Paneer at the end of mixing the rice.

Mattar Paneer /Paneer Peas Curry


Preparation Time : 20 min 
Serving - 4


Ingredients :


Green Peas - 300 gms
Paneer - 200gms.
Onions -2 large 
Salt to taste 
Sugar - 1 tbsp
Red chilli powder - 1tbsp
Ginger crushed - 4 cloves
Dhania - Zeera powder - 1tbsp each 
Turmeric powder  -  1 pinch
Butter - 3 tbsp
Coriander Leaves to garnish
Oil - 2 tbsp



Preparation:


1. Soak Green peas for 3 hrs. Boil The green Peas with a pinch of salt. Keep them aside.

2. Heat oil in a pan fry the diced paneer till they turn into golden brown.

3. Heat butter in a pan add Chopped onions,Grated Ginger and saute them for 2 min.

4. Add Salt,Red chilli powder,Dhania- Zeera Powder ,Green Peas,Turmeric powder 1 cup of water cook till the peas gets tender.

5. Now add Fresh Cream, Sugar,Fried paneer and mix well till the flavors come out.

6. Garnish with Coriander Leaves.

  

              Can be served with Rice/Indian Bread/Roti.



Potato/Aloo Butter Masala


I Tried this Potato Butter Masala which Can be prepared same as Paneer Butter Masala if Paneer is not Available and it turned into a delicious curry. Try it .


Preparation time : 20 min 
Serving : 4


Ingredients :

Potatoes - 250 gms
Tomatoes - 3 large chopped 
Ginger- Garlic Paste - 1tbsp
Garam Masala - 1tbsp
Dhania - Zeera powder - 1 tbsp each 
Turmeric powder - pinch
Red chili powder - 1tbsp 
Fresh Cream  - 100gms
Tomato Ketchup -1 tbsp
Kaju - 10 pieces
Butter - 50 gm



Preparation:


1. In a pan add Butter cubed potatoes fry them till they get golden brown drain and keep aside on absorbent paper.

2.  Heat oil in same pan. Add Onions, ginger-garlic paste, Red chilli powder,Dhania -Zeera Powder ,Salt fry them till oil gets seperates from oil.
3. In the same pan add butter,Onion Paste, cook them till oil leaves the mixture.Add tomato Ketchup, 1 cup of water.

4. To the boiling water add 1 tbsp of Sugar. When gravy gets thick add Kaju paste,Fresh cream,Fried potatoes.

5. Garnish with Coriander leaves.



 Tips:

                  Soak Kaju in lukewarm water for about 10 min before they made into paste.
  

             Steamed Rice/Roti /Butter Naan /Pulao goes well with this dish




Paneer/Cottage Cheese Tomato Curry

Preparation Time : 20 min
Servings - 5


Ingredients :

Paneer/Tofu - 250gm cubed
Tomatoes  - 2 large chopped
Tomato Ketchup - 1 tbsp
Chilly powder - 1tbsp
Onion - 1 big
Green chilli  -2
Ginger-garlic paste - 1tbsp
Salt to taste
Oil as needed
Cinnamon powder - 1/2tbsp
Turmeric powder - a pinch


Preparation Time:

1. Grind Onion,Ginger-garlic green chilli into fine paste .

2. Heat oil in a pan fry paneer cubes into golden brown, drain and keep them aside

3. Add chilli powder,Turmeric Powder,Salt, Chopped tomatoes cook till oil seperates from mixture.

4. Add Tomato Ketchup,1 and half cup of water and add fried paneer/Tofu to the boiling water  cook till gravy gets thick.

5. Add cinnamon powder,coriander leaves for garnishing


                                                   Serve hot with Steamed Rice/Roti





Aloo tamatar Sabji

Preparation time: 20 min
Serving -4



Ingredients:

Potatoes - 250gms
Tomato - 2 medium finely chopped
Onion - 1 large
Ginger -garlic paste - 1tbsp
Green chilli - 2
Tomato ketchup - 1tbsp
Cinnamon powder - 1/2 tbsp
Turmeric Powder - Pinch
Coriander leaves - for garnishing
Red chilli powder - 1/2 tbsp
Oil - 1tbsp
Salt  to taste



How I Made It:

1. Wash,Peel the potatoes cut them into cubes.


2. Grind Onion,Green chilli into paste


3. Heat oil in a pan add cubed potatoes and fry them till they get golden brown and keep them aside.


4. In the same Pan add 2 tbsp of oil add onion paste and fry till oil leaves the mixture.


5. Now add turmeric powder,chopped tomatoes,red chilli powder and saute them till oil seperates.


6. Add 1cup of water ,Tomato Ketchup,salt to this mixture while boiling add fried potatoes and cook them till gravy becomes thick. Add cinnamon powder .


7. Garnish with Coriander Leaves and serve hot.



Tips:


                    We can add 1 tbsp of lemon juice of our choice at the end. 



           Can be Served with Indian Bread/Butter Naan/Roti/Steamed rice.



Capsicum Paneer Masala

               Paneer goes well with Capsicum/Pepper. 

Preparation time : 20 min

Serving :4


Ingredients :

Capsicum - 3 (medium diced into cubes)
Cottage Paneer - 200 gms
Ghee - 3 tbsp
Turmeric powder - 1 tbsp
Onion Paste - 3 tbsp
Scraped Coconut - 1/2 cup
Ginger-garlic Paste - 1 tbsp
Dhania powder - 1 tbsp
Red chilli powder - 1tbsp
Tomato chopped - 1 medium
Garam Masala Powder- 1tbsp
Coriander Leaves for garnish
Fresh Cream - 4 tbsp


How I Made It:

1. Heat ghee in non stick pan add Cottage cheese fry them till they get golden brown.Drain them on Absorbent paper.

2. Add capsicum,ginger-garlic paste,tomato,turmeric powder,chilli powder,Dhania powder and salt.


3. Add half a cup of water and cook it for 5-7 min.


4. Add Fresh Cream,Garam Masala Powder, fried Cottage cheese and cook for 3 min.


5. Serve hot with Coriander leaves.


                                             It is best suited with Roti/Rice

Paneer butter masala/ Paneer Makhni

             Paneer is one of the delicious dish we can mould into different ways.Here is one of the Beautiful dish anyone will love... 


Preparation time :30 min

Serving - 5

Ingredients:

Paneer/Cottage Cheese : 250gms
Kaju paste - 1 cup
Onion - 2 finely chopped
Tomatoes chopped - 4 chopped
Ginger-garlic paste - 1tbsp
Powders(Dhania,Zeera) - 1tbsp each
Garam Masala Powder - 1  tbsp
Kasuri methi/dried fenugreek seeds - a pinch
Fresh Cream - 1 cup
Butter - 5 tbsp
Cloves - 2
Bay leaf- 1
Cinnamon Stick - 1" inch
Salt - to taste
Sugar - 1/2 tbsp
Oil - 3 tbsp

How I Made It :

1) Heat 3 tbsp of oil in a kadai.Add cloves,cinnamon,Bay leaf. Saute them for a minute.

2) Add chopped onions stir fry them for 20 seconds ,add Ginger-Garlic paste.Cook for another 20 seconds.


3) Add Dhania, Zeera powder,Garam Masala powder,Red chilli powder,Tomatoes.Cook till oil leaves the flame.Puree the mixture.


4) Heat butter in kadai.Add paneer cubes.fry them till they get turned into golden brown.


5) Add puree, a cup of water,Sugar let it cook for 3 minutes under low flame with covered lid.


6) Finally add cream and Kaju paste mix well and turn off the flame.Sprinkle Kasuri Methi on the dish.



Tips:


          For Kaju paste Soak the cashew nuts in luke warm water for 3 min.



                                                Serve with Roti/Butter Naan.
