Green Chutney /Hari chutney



                    Green Chutney or Hari chutney is another essential element used in Most of the Chats and Sandwiches. It can Be Prepared in Quick and Simple and Method with all easily available Ingredients in our Kitchen....


                Used as Seasonings in Different kinds of Chats/ Breads /Sandwiches. 



                   The things to be used are sooo simple but Gives you great Spicy and minty flavour. Includes only 1 step just to give them enough spins in blender....





Preparation Time: 7min





Ingredients:




1 cup washed and chopped Cilantro/Coriander leaves

1/2 cup washed and chopped Mint Leaves
2- 3 chopped Green chillies
Black Salt /Kala Namak /Nalla uppu - 2 pinches
Sugar - 1tbsp
Salt 2 pinches
Water as Required.
Lemon Juice - 2 tbsp




Method:




                  As I have Said this is Simple just Blend All the Ingredients together  in Blender to make it into Fine paste.  (just like Beaten curd Consistency but not buttermilk consistency.)




                Adjust the Seasonings as Per your Taste and Give it a Spin once in the Blender. 










     That's it Simple Easy Green chutney is ready to Serve...




                                   We can Store and Freeze it in Air Tight container for about 2 weeks.

Curry leaves Powder/ Karapodi



                      As these Days its Raining Day and Nights My garden is Full of Greenery..... I grew Curry leaf Plant in My Garden.  This Plant can be grown in any Season but grows huge in Monsoon season.


                When my Curry Leaf plant Grows well I decided to Prepare Spiced curry Leaf Powder which can be taken with Break fast, Lunch time.


              Curry Leaf Powder/Karapodi is South indian Spiced Powder can be Prepared in less time. When I was stucked to Telivision Watching My Favourite Flick Enjoying like Coached Potato And time Gets ahead I skip My curry. A Simple Meal With this Pre- prepared powder along with White Rice is My Lunch....
           

                         
                                 This is Rich in Protein Suggested for Good Diet.






Ingredients:



Curry Leaves - 1 whole bunch / 1cup
Dried Red chillies - 8
Coriander/Dhania Seeds - 2tbsp
Cumin/Zeera seeds - 1tbsp
2tbsp Bengal Gram /Senagapappu
Split Black Gram Dal - 1tbsp
Salt to Taste
Oil - 2tbsp
1 small lemon size/Gooseberry size Tamarind





Method:




1. In a pan heat 1tbsp of Oil Roast Red chillies Fry them till they change into Color.Dont burn them.Remove from Pan.

2. In the same Pan add Coriander/Dhania, Cumin/Zeera seeds toss them continuously till the color changes under Medium Flame.Make sure you dont burn them.Keep them Aside.

3. Again in same pan add 2 tbsp Bengal Gram /Senaga pappu , 2tbsp Split Black Gram.Keep tossing them continuously till the color changes them into red color. approximately for about 2- 3 min.Remove from Pan keep aside.





4. Once all the mixture cools down.First blend the Dals (Bengal gram , Split Black Gram ) into coarse powder.

5. Now add Tamarind blend it for a minute.Again add Curry leaves, Red chillies,Salt to taste,Coriander/Dhania seeds,Cumin/Zeera seeds to the Blender. Give them enough Spins so that it turns out into Fine powder.

6. Adjust the Salt Transfer into Air Tight Container.

7. Serve Hot with Steamed Rice.



                                            Can be Stored for about 20 days..





             Serve it with Idlis drizzled with Clarified Ghee / Any kind of Dosa....

Mixed Vegetable Stir Fry






                    When you do have left over Vegetables in Small Amounts need not to worry about what To cook.You can Combine and mould it into Fabulous Dish with Low Fat also in a Healthy way.


               With My Leftover Beans,Carrot,Potato I Stir Fried with Seasonings which are all Easily available things in Our Kitchen.


      This is So Simple and Easy to Make... Tastes Heavenly with any Combo....






Preparation Time: 20min
Serves - 4 people





Ingredients:




Chopped Beans - 1 cup
Chopped Carrot - 1/2 cup
Potato Diced into Medium Size - 1 cup
Red chilli powder - 1 1/2 tbsp
Dhania /Coriander Powder - 1tbsp
Dry Roast Cumin Powder - 1tbsp
Mustard / Fennel Seeds - 1tbsp
Cumin /Zeera Seeds - 1tbsp
Turmeric Powder - a pinch
Salt as Required
Oil - 5tbsp
Fresh Grated Coconut - 3 tbsp (optional)






Method:




1. Half boil /Pressure cook Vegetables with a few pinches of Salt upto 2 whistles. Drain and Keep them Aside.

2. In a Non - Stick Pan Heat 3tbsp of Oil add Cumin Seeds,Mustard Seeds, toss them For about 10sec.

3. Add Half boiled Vegetables to the Pan with a Pinch of Turmeric Powder,Salt. Toss them For about a minute.cover it with Lid.

4. Remove the Lid Add Red chilli powder,Cumin powder , Coriander/Dhania Powder toss them for couple of minutes.

5. Finally add Fresh Grated Coconut mix for about few Seconds .Turn off the Flame...






Tips: 


               
                               Squeeze Lemon Juice over them..... If you want to Taste in Tangy Flavour....





                       Can be Served with Steamed Rice /My Version of Soft Chapathi/Pulka...

Teasel Gourd/Aakakarakaya /Kantola Curry

 

        As Its monsoon Time now these days Weather showers city like Anything....  Such Times calls For a Veggie Grown mostly during this Season.


     When I went to market this Morning I had a Glance At them in close Cant Resist To buy those Fresh Garden Picked Teasel Gourds....  









            These Are so Beautiful by their Look has got Tender Meaty Flesh Inside with Tiny Seeds. I Prepared Semi- Gravy  With Them For My Meal...





Preparation Time : 20min
Serves 4 People





Ingredients:




Teasel Gourds Diced Cubes - 2 cups
Fennel Seeds - 1tbsp
Tamarind - Small Lemon Size
Fresh Grated Coconut - 1/2 cup
Coriander Leaves - 1/4 cup
Sugar - 1 tbsp
Red chillies - 3
Oil - 5tbsp



For Tampering:


Mustard Seeds - 1tbsp
Cumin Seeds - 1tbsp
Curry Leaves - 10
Pepper powder - 1tbsp
Salt to taste.




Method:



1. In a Frying Pan heat 1/2tbsp of oil Fry Red chillies Till they Change into color(For about 10sec).Keep them Aside.

2. When they Gets cool add Red chillies To the Blender along with Fresh Grated Coconut,Fennel Seeds,Tamarind Extract in to Smooth Paste with Help of Little amount of Water.

3. In a Frying Non -Stick Pan heat 3-4 tbsp of Oil add Mustard ,Cumin Seeds toss for few seconds.Add Curry Leaves Wait till they Dance for awhile.

4. Now add Chopped Teasel Gourd Pieces Fry them for about 5min  till pieces Becomes Soft and Tender.

5. Add Blended Paste,Pepper powder to the Frying Pieces mix for about  couple of Minutes. Adjust Salt and Turn Off the Flame.



         

                       





Tips: 



                You can Deseed the Pieces as per your Choice . But I Used them For extra Crunch to enjoy those Crispy Sounds while Chewing Them.





Double ka Meeta/ Bread Halwa ~ Indian Sweet Dish

 
              Its Been Ages since I tasted Sweet. So I decided to Make Rich sweet with Lot of Seasonings...  Such times calls for Rich Heavy Mouth Watering Puddings...   When I Peeped into My Pantry Left over Bread Slices are Looking at me and making Sweety Whispers to my Heart to Make use of them...
     

             So I Decided to make Bread Halwa also called Double Ka Meetha/ Bread Pudding....  



                This can be made by Pooling Pan Fried Bread Pieces in Sweet Sugar Syrup by adding some Flavours and Seasonings.





Preparation Time: 20 min
Serves - 5 people




Ingredients:

Bread Loaf - 1 or 12 pieces
Sugar - 2 cups (Increase or Decrease as Per your Sweet Palate)
Water - 1 cup
Boiled Low Fat Milk - 1cup
Cardamom/Elachi powder - 1tbsp.
Chopped and Roasted Nuts In Ghee (Almonds,Cashew nuts, Raisins) - 1 cup all together.
Ghee /Clarified Butter - 3/4th to 1 cup.

Method:

1. Heat 1/2 Cup of Ghee in Frying Pan Meanwhile Tear Bread into Tiny Pieces. When Ghee Melts add these White Snowy Pieces toss them till they Turn into Golden Brown.

2. In a Thick Bottom Vessel pour and Heat Sugar and Water together till Sugar Melts.

3. Turn off the Flame Add Grounded Cardamom/Elachi Powder.Stir it once.

4. Now add Fried Bread Pieces,Milk to the Syrup. Mix Well Make sure That all the Bread Pieces Becomes Mashy while Stirring.Leave some Lumps of Bread while Mixing. This will Gives you Softy Texture and You can Feel th Bread Pieces While Eating.... Simmer for about 5min so that Bread Can infuse all those Flavors and Sugar Syrup.

5. For Extra Savoriness Add Roasted Nuts as Toppings.... And Turn off the Flame.










     

                 Can be Served Luke Warm / Chill.... I prefer to eat chill as when it gets Refrigerated sweetness of the Dish will Increase....



       Best Dish for unexpected Guests.....can be made in a Jiffy...
